The series DC motors we typically use in hobby conversions are built
from forklift designs.  They are pretty tough overall.  The motors can
handle almost anything including immersion and will keep running (not
recommended but you'd be surprised).  Most conversions do not do
anything special to protect the motor.  I would recommend just a
simple splash shield to keep road debris/water from hitting the motor
under normal conditions.

Putting a full cover over the bottom of the engine bay is tough to do
well, since water leaks in from a lot of places including the existing
radiator grill and won't drain well..
